Chili Mole

Chili Mole Chili Mole
Traditional chili spices are scented with unsweetened Mexican cocoa and simmered with red beans, fresh sweet potatoes, corn and pumpkin seeds (pepitos) for a unique, rich flavor.

There is no doubt that Americans have been fascinated by Chili for over a hundred years, but it's origin is a spicy topic! Traditionally, Chili is known as a hearty stew in a broth that is flavored by a Capsicum variety (chili pepper). It's most recent form has been attributed to the ranchers and cattle drives of the Old South West. Chili was a filling way to feed hungry cowboys. Tough portions of meat were simmered for long periods of time and seasoned with spices and chili peppers. Beans were added for a hearty and portable source of protein.

There is some debate about Chili originating in Mexico, although it is currently rare to find Chili in traditional Mexican restaurants outside of tourist areas. But certainly, Latin America has been using dried peppers in their soups and sauces for centuries.

Much like every chili maker, we are proud of our recipe. We use a Pasilla pepper base, then mix in our own special Mole seasoning. Mole is another old and proud dish. The word Mole is an old Spanish work meaning "mix" but today has become a broad term for a Mexican sauce with a pepper base and large variety of seasonings. Many Moles feature unsweetened chocolate, pumpkin seeds, dried peppers and spices as ours does in this delicious dish.
