The coming of fall also means the coming of the Winter Squash. The squash family can be divided into two varieties....summer and winter. The summer squash, like the yellow crookneck, the popular zucchini and even the cucumber, are picked from the vine before they are fully matured. This gives these gourds a softer and edible skin.

The winter squashes, such as the pumpkin and the butternut squash, are allowed to fully ripen and mature while still attached to the vine. This give them a much harder and inedible shell providing them an impressive shelf life. And under this tough shell is the delicious, sweet and nutty flesh that has made winter squash a culinary staple all over the globe.

Looking for an all-American food? Look no further than the squash. The history of the squash has been traced back to the Americas and has been a staple for over 5,000 years. The early American Indians prized the squash for it's delicious meat and it's ability to be kept for long periods of time. Stored in a cool, dry location the butternut squash can be kept for months at a time. Even at room temperature, you can enjoy a butternut squash weeks after purchase.


Our butternut squash soup starts with splitting the squash in half then removing the seeds. The squash is then roasted until golden brown and allowed to cool. The meat of the squash is separated from the thick shell and boiled, then blended with a delicious mix of fall spices, cream and finished with a touch of sherry and ricotta cheese.
